Patty Poole made a major move to the North Dallas area in 2012 from the desert southwest town of Midland,
TX. Her degree is in Dietetics, but needed to go directly to work due to financial hardships, so didn't do an internship
for becoming an RD. She was originally in the ADN Nursing program and then found that Health and Nutrition
were more of an interest. She has maintained standing on the National Dean's list for all of her
undergraduate courses, with a GPA of 3.40.
Patty's most recent position is as a Food Service Director at a small rural hospital in Eastern New
Mexico. This was another major move. It proved very interesting and the people were wonderful, but Texas was pulling on
her and her husband's heartstrings. The old adage, "You can take a boy out of Texas, but you can't take the Texas out of
the boy"
holds true in their case. Patty has worked in numerous LTC facilities as a CDM, as the EVS manager at a County Hospital in
Odessa, TX. as a Food Service Director at a psychiatric hospital and an Operations Manager of a Food Service Department
at another county hospital.
Having owned her own Deli and managing a painting and drywall company for 20+ years, coupled with the dietetics
degree, Patty can handle a wide variety of food service or healthcare environmental services challenges.
Patty is active in her local church, participating in the Music and the Prison ministries. She and
her husband write and sing Christian music. She is an avid reader and loves to write.
Patty has been married to the same man for 41 years, has 2 daughters, and 5 grandchildren
ranging in ages 13 years thru 20years.
